A sweet treat every once in a while.
These antioxidant energy balls will keep you energized and satisfied. Suitable before/after your workout, as a late afternoon snack, or simply when you feel like having a tasty and deliciously healthy treat. They are filled with goodies for both your body and mind. Two thumbs up!
Ingredients: (makes ~ 10 balls)
100 g dried dates
50 g walnuts (preferably soaked walnuts)
1 tbs coconut oil
1 tbs hazelnut flour
3 tbs raw cacao powder
1 tsp hemp seeds
1 tsp bee pollen
1 tsp sea buckthorn powder
2 tbs cold coffee
A hint of vanilla powder
A pinch of sea salt
This is how you do it:
1. Put the dates and walnuts into a food processor, or a mixer, and blend until smooth.
2. Place the mixed dates and walnuts in a bowl. Add the rest of the ingredients and work with your hands until smooth. You can of course let the food processor do the work. I just like mixing it with my hands since my mixer isn’t good enough.
3. Roll into balls of desired size. Roll in cacao powder, hemp seeds, sea buckthorn powder, acai powder or desiccated coconut. Place on a tray and refrigerate.
Many nuts, especially walnuts and almonds, have a much more appealing taste after they are soaked and rinsed. When soaking walnuts the tannins are rinsed away, leaving behind a softer, more buttery nut. The benefits of soaking nuts are an increased enzym activity, greater absorption of the food’s nutrients by the body and increased digestibility.
Soak your nuts from 20 minutes to 2-3 hours or overnight in your refrigerator. The soak water from nuts should always be removed and never used as water in a recipe.
