Something sweet & Blissballs

A couple of weeks before Christmas I was eating way more sugar than my body actually needed. I wouldn’t go so far to call myself a sugar addict, but still I had my periods when I didn’t think, rather ate the sweets in front of me. I’m working part-time at a cruise ship and usually there is candy wherever you lay your eyes. It can be hard to stay away, especially when tired. To eat one to two pieces of candy or chocolate everyday is NOT good. That’s a lot of pieces in a month. The problem for me was that I wasn’t eating enough nutritious food at that point, nor drinking enough water. I felt as if I was constantly hungry and almost always peckish. I haven’t eaten any sugar, such as candy and chocholate, the last  five weeks. Yeajj! I have one craving though, and it’s dark chocolate minimum 70 %. Rödbetshummus

Hummus är ett perfekt tillbehör och passar till det mesta. Servera med kött, fisk eller fågel, använd som pålägg eller som en grönsaksdipp. Ingredienser: 400 g kikärter 2-4 st färska rödbetor ( två stora eller fyra små) 1 tsk tahin 1 pressad citron 0.5 dl olivolja 1/2 tsk cayennepeppar 1-2 st hackade eller pressade vitlöksklyftor Salt & peppar Instruktioner: Skala och koka rödbetorna tills de mjuknat. Skär de i mindre bitar och förkorta koktiden. Låt svalna. Sätt alla ingredienser i en mixer och mixa till en jämn smet. Tillsätt eventuellt lite vatten om du tycker hummusen blir för tjock. Homemade Nutella

Do your children scream for Nutella again? Or is it you this time? I made it even more difficult for you to resist it. A healthier version of the popular chocolate spread is coming up! In fact it is right here. The nutty taste combined with rich chocolate flavour is absolutely irresistible. Spread it on a slice of bread, banana pancakes or why not eat it with a spoon directly from the jar. Temptations, temptations… One thing’s for sure – It will taste heavenly anyway you will have it. I used only about 60 g melted chocolate, if you want a more creamy and sticky nutella I would recommend you to use about 100 g (or more) melted chocolate. Turmeric-Tahini Dressing

I found this recipe on Bon Appétit Magazine’s website. A really nice and creamy tahini dressing that goes well with for example a warm kale, spinach and quinoa salad, served with halloumi and falafel. Turmeric-Tahini Dressing Ingredients: 0.5 dl tahini 3 tbs fresh lemon juice 2 tbs olive oil 0.5 dl water 1/2 tsp ground turmeric A hint of cayenne pepper Salt & Pepper Whisk together tahini, lemon juice, olive oil, turmeric, cayenne pepper, water until smooth. Add salt and pepper to taste. Keep chilled up to four days. When making the salad I just mixed cooked quinoa with lightly fried kale and spinach. Serve with fried halloumi and falafel. Cleansing morning drink

En vän till mig rekommenderade denna uppfriskande, syrliga och renande dryck. Man känner riktigt hur bra den gör för hals och kropp. Uppiggande är den också! Om du försöker minska på kaffedrickandet kan jag varmt rekommendera denna. Du behöver: En citron Riven ingefära Lite cayennepeppar och eventuellt gurkmeja Honung Hett vatten Pressa en citron, riv ner lite färsk ingefära, ett par kryddmått cayennepeppar och en tesked honung. Blanda om alltsammans och häll över hett vatten. Cleansing morning drink A friend of mine recommended this bracing cleansing morning drink. It is really nice and healthy and already after the first sip you can feel how good it is for your throut and body. I strongly recommend it if you are trying to cut down on caffeine. Ingredients: A lemon Grated ginger Cayenne pepper Turmeric Honey Warm water Squeeze the lemon into a cup or glass, add grated ginger, a hint of cayenne pepper and a teaspoon of honey. Mix everything with a spoon before you pour hot water into the glass.

En av de bästa sakerna med att ha en matblogg är när det är dags för fotografering. Jag fullkomligen älskar allt som har med matfotografering att göra, trots att jag är långt ifrån att vara en proffessionell fotograf. Jag har ännu mycket att lära. Men jag gör det bästa av de förutsättningar jag har. Jag utvecklas mycket för var dag som går, ja det är väl som de säger – övning ger färdighet. En nytt kameraobjektiv står högt upp på inköpslistan. Och jag skulle nog inte heller tacka nej till ett kök storlek större. Men fram tills dess får de här duga. One of the best things about having a food blog is when it’s camera time. I love everything about food photography and styling, although I’m far from being a proffessional photographer. I still have a lot to learn. But I’m improving my skills more and more for each day, surfing around the internet and reading magazines for inspiration is a must. Buying a new camera lens is on my to-do list! Superfood of today – Manuka honey

Manuka in a nutshell Manuka honey is a rich source of amino acids, B-vitamins (B6, thiamin, niacin, riboflavin), Calcium, Copper, Iron, Magnesium, Manganese, Phosphorus and Zink. Manuka honey is known to have a considerably higher level of enzymes than regular honey. These enzymes create a natural hydrogen peroxide that works as an antibacterial. UMF (unique manuka factor) is a global standard in identifying and measuring the antibacterial strenght of Manuka. The minimum UMF rating recognized is UMF5, however, it is not considered beneficial unless it carries a UMF10+ level of antibacterial activity in the honey. Affirmations

Affirmations You are what you think. The word affirmation comes from the Latin affirmare, meaning ”to make steady, strenghten.” Affirmation is a declaration that something is true. To work with affirmations is to reprogram your thoughts, how you feel and act in a certain situation. It is almost like visualizing; the difference is that you formulate a sentence instead of visualizing a picture. ”The thing that happens when you repeat a positive affirmation is that it appears in your subconscious and automatizes – it becomes the truth.” An affirmation should be pronounced as happening in the present, here and now. For example; ”I’m well.” ”I’m strong.” ”I’m successful in everything I do.” You are reprogramming mentally. An affirmation should never contain words such as not, never, should or must. The feelings the affirmations evoke should be positive and thereby they should make you feel strong and happy. Chocolate mousse with cashew cream

En simpel och läcker choklad mousse med få ingredienser. Perfekt om man är sugen på något gott efter middagen, men vill undvika desserter sprängfyllda med socker. Både chokladmoussen och cashewgrädden kan användas som fyllning till raw food tårtor. Chokladmousse Ingredienser: (2-3 personer) 1 mogen avokado, 3 msk råkakao pulver, 1/2 tsk äkta vaniljpulver, 1 msk honung, 2 tsk nötsmör (mandel- eller hasselnötssmör) Mixa alla ingredienser med en stavmixer till en jämn och fluffig smet. Låt stå i kylen ett par timmar. Cashewgrädde Ingredienser: (2-3 personer) 1.5 dl blötlagda cashewnötter (blötlägg åtminstone fem timmar), saften från en lime, 1/2 tsk äkta vaniljpulver,1 msk kokosolja, 2 msk ekologisk honung Placera alla ingredienser i en mixer och mixa till en jämn och fluffig smet. De kan ta några minuter så ha tålamod. Mixa till en gräddliknande konsistens. Låt stå i kylen ett par timmar. Servera med rostade solroskärnor och lingon.
