Cookie monster

Oat Hazelnut Cranberry Cookies After dinner I felt like having cookies. So I made cookies. I took a quick look in the kitchen cabinets and decided to make oat hazelnut cranberry cookies. They turned out soft, a bit chewy and in fact rather delicious. I poured myself a glass of cold almond milk and threw myself on the couch, the cookies at arm’s length distance. I prefer staying here the rest of the day, doing nothing. Perfect Saturday evening. This weeks workouts have made me absolutely exhausted. I have pain everywhere. Still, I love working out. Love the way it boosts my mood and makes me feel lively and energized. But since I’m looking for balance in my life what better way to combine hard workouts with cookies like these. Sunny side up

Breakfast lovers! Good morning, or more like good day. My last day off before work starts again. 15 days of work at the cruise ship, feels like ages… Don’t get me wrong, I enjoy my work but I prefer to sleep in my own bed every night. This morning I enjoyed an avocado toast with an egg on the side. Sunny side up! I squeezed a bit of lemon in the mashed avocado and seasoned with himalaya salt, turmeric and pepper. Really fresh and tasty. Now, three cups of coffee later, I’m ready to hit the gym. Who would I be without my morning coffee?! Most probably a pain in the ass. By the way, I got a crush on eggs at the moment, in every form. I could eat like five per day, but try to stick to two. One of the best foods I know. Coconut oat porridge

I haven’t been eating oat porridge in a while. What usually happens when I eat oat porridge is that I get hungry way before it’s lunchtime. Today I cooked the oats in coconut milk, and I’m pretty sure I won’t  be hungry in a couple of hours. It was really nice and tasty with a creamy coconut flavour. With a hint of vanilla, sweet dates and blueberry jam the work is perfectly accomplished. A new favourite in deed. Ingredients: 1.5 dl gluten free oats 2 dl light coconut milk 1-2 chopped dates  Season with himalaya salt and vanilla powder Shredded coconut for topping Instructions: Cook the oats in coconut milk on low heat. Add the chopped dates and seasoning. Add more coconut milk if you think the porridge is too thick. Top with shredded coconut and jam. Smoothie & Fashion

Blueberry smoothie I’m a smoothie junkie. And if you ask me you can never go wrong with a blueberry smoothie. The sun is shining through my windows and I feel Spring knocking on my front door. How lovely! These delicious berries are full of antioxidants, rich in fiber and vitamins A and C. They boost your brain, and may even prevent cancer and diabetes. Isn’t that a perfect reason to start munching on these tasty berries daily. If you have the possibility to pick your own berries during Autumn and put in the freezer it would be splendid. At least it’s a cheaper option than buying from the food market. If you tired of using bananas in your smoothies, try to add avocado instead. It gives that rich and creamy texture, not to mention healthy fats! Fast food

Healthy fast food dinner Gluten free avocado toast with halloumi and grated fresh turmeric. Falafel and kale fried in coconut oil on the side. Today’s easy peasy dinner. Fresh, healthy and delicious. When I’m home alone I usually don’t spend a lot of time cooking dinner for myself. I want it fast and I want it now! Peculiarly after spending time at the gym. I love avocado on toast, it’s so nice and creamy and a healthier option for butter. Fried halloumi on top and you’re good to go. Fried kale is another favourite, suitable with almost anything. Use coconut oil when frying to get those healthy fats your body needs. Bon appetit! 

Brekkie & Elle

Breakfast – The most important meal of the day. And in my opinion the best meal of the day. What can I say, I love having breakfast. Could probably eat my brekkie five times a day. So to all of you that do not eat breakfast – start now! It is a healthy habit that gives you that well needed energy throughout the day. Enjoying a nutritious and healthy breakfast helps you control your appetite during the day and prevents you from overeating. I’m trying to begin each day with a warm cleansing drink with water, lemon, ginger, turmeric, cayenne pepper and honey. This does not happen every day though, but it is my aim since it is such a refreshing start for the body. At least I try to drink two glasses of water before I indulge in my morning coffee 😉 It feels like I’m still in my night shift routines. I fall a sleep around 3 am and wake up at 11 am. Raw cacao smoothie

Today’s brekkie – A delicious and creamy raw cacao smoothie with a hint of turmeric. Such a ridiciously yummy breakfast. Don’t be afraid of adding too much turmeric, it gives that extra intensity and brings out the cacao flavour. Ingredients for two persons: 2 bananas 2.5 dl Almond milk 150 g greek yoghurt (soya yoghurt or oat yoghurt for a dairy free smoothie) 2 tbs sugar free peanut butter 0.5 dl shredded coconut 1-2 tbs maca powder 2 tbs raw cacao powder  A couple of ice cubes A hint of vanilla powder A hint of turmeric Instructions: Place all ingredients in a blender and mix on full speed until smooth and creamy. Blueberry Smoothie

Today was a good day. I slept in – woke up at 2 pm. After working 12 days I was completely exhausted. I made myself a blueberry smoothie and went out for a walk. A sunny Sunday indeed. Blueberry Smoothie Blend together 1 banana, 2 dl blueberries, 2 tsp peanut butter, almond milk, 2 tbs turkish yoghurt, 0.5 dl gluten free oats, a hint of vanilla powder and 1 tbs maca powder. Top with granola. Since it’s Sunday I ate a heavenly chocolate granola which I bought from my favourite store Anton & Anton in Helsinki. The store is really nice, love their range of good quality food products and the staff is very helpful. I wish they would open up a store in Stockholm as well. Otherwise I got a new phone and the camera is pretty good to be a phone camera. So pleased about that. The weather was absolutely amazing, Spring will come after all!
