Banana Walnut Bread

This piece of bread! Almost like a piece of art. Almost. Banana walnut bread with cacao nibs – it  can’t get any better than this. My three day cleanse starts tomorrow though. Maybe not the best time to bake a loaf of bread. But oh so happy I will be when I find this beauty in the freezer when I’m done with the cleanse. I’m such a sucker for bread, although gluten free bread baking isn’t the easiest. Usually I buy my bread from the store. I try to choose the ones without additives and sugars. It’s rather expensive so I should start baking more often. It’s not that difficult, especially if you do it more often. At least this banana bread was easy to bake. So no excuses not to start baking.

Ingredients:

5 dl gluten free flour mix (I mixed together rice-, almond- and quinoa flour)

3 ripe bananas 

3 eggs

50 g melted coconut oil 

1 tsp baking powder

1 tsp baking soda

1/2 tsp cinnamon

1 dl cacao nibs

1 dl chopped walnuts

Instructions:

1. Preheat oven to 175 degrees celcius.

2. Mix all ingredients together in a big mixing bowl.

3. Pour the mix into a greased pan. Top the bread with cacao nibs and chopped walnuts.

4. Bake for 35-45 minutes.

The bread is perfect on the breakfast or brunch table. Serve with peanut butter, almond butter, blueberry jam or organic butter. I can imagine it goes well with cream cheese as well. Yes! Cream cheese and blueberry jam on a slice of banana walnut bread. Most probably a match made in heaven.

I found a recipe similar to this online a couple of weeks ago, I can’t remember where though. I just replaced the butter with coconut oil and used the gluten free flours I had at home. It tastes heavenly! I recommend you to enjoy it slightly warm for best taste.
