The sun woke me up. Wonderful. Oh how I love Spring. Although I feel extremely tired from working two weeks straight and long shifts the sun always gets me in good mood.

This store bought porridge can easily be made at home. Mix together buckwheat flakes, quinoa flakes, amaranth, raisins or chopped dates, chia seeds or flax seeds. Store in an airtight jar and you’ll have a healthy and filling porridge mix for those days you need that extra energy.
I cooked the porridge in almond milk, seasoned with himalaya salt and vanilla powder. 1 dl of the porridge mix and 2.5 dl almond milk was a pretty good amount for a hungry lady like me. Serve with dried mulberries, granola, dried cranberries and goji berries. Add a spoon of lemon, coconut, vanilla soy yoghurt and you have yourself a healthy, nutritious and yummy breakfast.

Mix natural soy yoghurt with shredded coconut, a hint of vanilla powder and lemon juice. So fresh and tasty! Enjoy on its own or with crunchy gluten free granola and berries. Or like I did today – on top of porridge.
