10 tips for a balanced life

Health, what is health? According to World Health Organisation: ”Health is a state of complete physical, mental and social well-being and not merely the absence of disease or infirmity.” The definition has not been amended since 1948. A definition that might be in need of some innovations. To me the definition sounds rather overwhelming – ”a state of complete physical, mental and social well-being..” If you ask 100 people what is meant by physical, mental and social well-being you will most certainly get 100 different answers. To me health is about balance. Balance between different important aspects in life. All parts in your life might not be complete but still you might feel a sense of joy, fulfilment and balance. Try to find your balance in life. 1. Choose a well balanced diet, all year around. Here it is of utmost importance that you listen to your body. What does your body need. We are all different, meaning our bodies act differently to certain foods. You might suffer from allergies or from an illness demanding …

Strawberry tartelette

Strawberry tartelette with chocolate hazelnut spread These beautiful and simply delicious tartelettes are really easy to make. I’m in love with the crust, so few ingredients but still really delicate. Lemon and vanilla in combination with rich and creamy macadamia nuts and sweet dates. Oh yes it’s a match made in cake heaven. Add chocolate hazelnut spread and fresh strawberries and you have a perfect, yet simple, dessert. Ingredients: (approx. 6 tartelettes) Crust: 20 dates 100 g macadamia nuts 0.5 tsp bourbon vanilla powder 1 freshly squeezed lemon Instructions: 1. Place the nuts in a blender and mix for a couple of seconds. There can be some chunky nut pieces so don’t mix for too long. 2. Add the dates and mix until combined. 3. Flavour with bourbon vanilla powder and squeezed lemon. 4. Form the dough into square pieces (approx. 6 pieces) 5. Decorate the tartelettes with strawberries and chocolate hazelnut spread. I used an organic hazelnut spread that I bought from the store, but you can easily make your own spread. This one …

Treat yourself

It’s important to treat oneself once in a while. Take time to sit back and enjoy the moment – the silence, the sound of the ocean, your dog snoring or rain splashing against the window. There are many ways to enjoy life and to treat oneself. Sleeping in, eating breakfast in bed, taking a walk, playing with your kids or dog, cooking with someone, reading the newspaper without being interrupted, working out, listening to your favourite song or simply having fresh strawberries with nutella in bed a Friday morning. Choose the things that make you feel energized and complete. A few of my favourite things to do is taking a morning walk preferably with a coffee in my hand, having breakfast in bed, laughing together with my loved ones, cooking, photographing and working out. These things give me well needed energy and helps me feel alive.

Strawberry & macadamia ice cream

A luxurious and simply delicious ice cream made of fresh strawberries, creamy coconut and tasty macadamia nuts. A lovely milk free ice cream in deed, will definitely be one of my favourites this Summer! Next time I’ll take blueberries instead of strawberries. Or why not blackberries or cloudberries? My favourite ice cream of all times is definitely liquorice ice cream, feel I need to make my own milk free version sooner or later. But, back to this beauty – tastes divine so you better try it! Ingredients: 70 g unsalted macadamia nuts (approx. 1.5 dl) 2 dl coconut cream 2.5 dl fresh or frozen strawberries 1.5 tbs agave syrup A hint of vanilla powder 2 tsp freshly squeezed lemon juice Optional: Raw cacao nibs and chopped unsalted macadamia nuts Instructions: 1. Place the nuts and coconut cream in blender and mix until smooth and creamy. 2. Add the strawberries, agave, vanilla and lemon juice and mix on full speed. 3. Raw cacao & basil mousse

This chocolate mousse is the perfect healthy weekend dessert. Chocolate and basil! I didn’t realise they were such a great couple. I had a dream about chocolate and basil the other night. Yes I know, the foodie in me is talking. Dreaming about food. But it’s rather convenient to be planning recipes while sleeping, then I don’t need to do it while awake 😉 Perfect. You have to try this. Promise me that! Ingredients: 1 banana (you can also use a frozen banana) 4 dates 0.5 dl natural soy yoghurt OR approx. 4 tbs coconut cream 2 tsp almond butter 2 tbs raw cacao powder Chopped fresh basil A hint of vanilla powder 1 ice cube Instructions: 1. Place the banana, dates, soy yoghurt (coconut cream) and almond butter in a blender and mix until smooth and creamy. 2. Add the raw cacao powder, basil, vanilla powder and ice cube. Mix on full speed for a couple of minutes. 3. Pour the mousse into a glas, decorate with strawberries, cacao nibs and fresh basil. If you’re …

Salmon & veggie pizza wrap

I would say it’s ridiculously easy to make healthy pizza and wrap. At least it’s easy to choose among healthy fillings/toppings; falafel, smoked salmon, hummus, fresh veggies, chicken, fried halloumi, avocado, nuts and seeds. The actual pizza/wrap might be rather tricky to make, the gluten free version that is. This recipe is more suitable when making a pizza, since it should be a bit softer when rolling it into a wrap. But hey, it tastes pretty nice so I didn’t really care when it didn’t stick together. I enjoyed it as a wrap and stuffed it with goodies such as smoked salmon, veggies fried in coconut oil, sunflower- and pumpkin seeds as well as milk free ”creme fraiche”. Ingredients: 1.5 dl quinoa flour or buckwheat flour 1 dl hazelnut flour or almond flour 1 tsp baking powder 1.5 tbs psyllium husk 1 tbs psyllium seeds 2 eggs 0.5 dl almond milk 1 tbs natural soy yoghurt A pinch of himalaya salt Chopped fresh basil Instructions: 1. Morning sunlight

God morning sunshines! Sunday morning and breakfast in bed. I’m totally obsessed with this homemade bread, had to bake new bread buns yesterday. Soon it’s time for a run, the weather is absolutely lovely today. But first – let me drink my coffee, watch the news, read and relax. What are you doing today? Having problems eating breakfast in the morning? Don’t panic. Try to go out for a walk or do some other light exercise before you sit down at the breakfast table. Some fresh air will get your appetite going 😉 Starting the day with a healthy and nutritious breakfast will take you one step closer to a healthier lifestyle.
