Quick lunch

This is a quicky for those busy days. It’s delicious and takes only a few minutes to prepare. Suitable also as a side dish. Bon appétit!

Halloumi salad

Ingredients: (1 person)

Halloumi

Baby spinach

Pine nuts

Avocado

Lemon juice & Balsamico

Instructions:

  1. Toast the nuts in a dry frying pan.
  2. Cut half a halloumi into four to five pieces and fry in coconut oil until light brown.
  3. Place baby spinach, avocado, pine nuts and halloumi on a plate.
  4. Sprinkle some lemon juice and balsamico on the salad.
