Budapest

I’ve been spending the last two weeks travelling. The first days were spent with my boyfriends family in Gdansk, celebrating his mothers birthday. And what a wonderful city! Such a cute little place. We rented this lovely, old appartment in the old town. Waking up to church bells every morning. At the moment we’re in Budapest and I still have three days left before I need to be back at work. Enjoying every minute. The weather is perfect, almost 30 degrees and sunshine. Welcome summer! Yesterday I ran 11 km in an almost unbearable heat. Now time for Sunday strolling, coffee and donuts. Vanilla Oat porridge with Blueberries & Cacao Nibs

Yes I know. Im obsessed with this bowl and tray. Need to buy some new kitchen stuff so I can start obsessing over something else 😉 Anyhow, this oat porridge with extra everything – to die for. I cooked the oats with rice/coconut milk and added vanilla powder & cinnamon. I then topped the creamy porridge with some blueberries, raw cacao nibs and pieces of chunky flap jack. Yum! ”My comfort food” I suppose I’ll never get tired of porridge. I could easily have it for both breakfast and as an evening snack. It’s so versatile; you can cook it with either water, almond milk, rice milk, hazelnut milk or whatever kind of milk you prefer. Or why not bake it in the oven?! Spice it up with some mashed banana, cinnamon, cardamom or vanilla powder. Not to mention the wide range of toppings; berries, granola, cacao nibs, seeds, banana, coconut flakes, home made chia jam, apples and yes the list goes on. My comfort food. A sunny morning walk. Train hard Eat well

I have one week off before I start working at the cruise ship again. It has been great being able to work at the office for the past nine months; more structure and routines in life. Eventually everything comes to an end. However, I’m looking forward to a summer with travelling, hopefully good weather, tough workouts and of course plenty of work. This week I try my best to recharge my batteries, which means getting enough sleep, eating my vitamins and greens and last but not least many, many workouts. For me working out is like meditation, the tougher the workout the better meditation 😉 At the same time I also appreciate long walks, yoga and stretching… Yes, I try to squeeze in a little bit of everything! Loading up with good carbs and I’m good to go! This week my training might look a bit like below (with some room for changes..) And no, I don’t work out like this all the time.
