Favourite soups & lazy Tuesdays

This delicious african inspired sweet potato soup with peanuts and lentils is definitely a new favourite. It’s nourishing, perfectly creamy and full of flavour. My cup of tea. I’m usually all about making my own food, but when I don’t have time or just don’t feel like it I grab myself a soup or veggie stew from Spoons.

Today I felt extra hungry (it has to do with the fact that I spent almost 2.5 hours at the gym yesterday) so I cooked myself some basmati rice, fried it in coconut oil with fresh coriander, kale and mushrooms. I added the soup to my bowl of rice and enjoyed it as a kind of sauce. Perf and absolutely delish! I love eating rice with some kind of spicy sauce, it’s the best! Carb lover as I am 😉

The soups from Spoons are really filling and contains a lot of yumminess and healthy ingredients. Two thumbs up! Especially on those days when I’m lazy after too much work and need something quick, tasty and nourishing.
