Kale Smoothie

‘Don’t let the colour fool you. A green smoothie a day and you’ll become Wonder Woman.’   Linda I got the chance to make this lovely green smoothie today, just before my blender decided it was time to say goodbye. Oh well, we have had good times, many delicious and nutritious smoothies she have made. The taste is very ‘green garden’, but the banana gives a nice sweetness to it. Try adding almond butter in your kale smoothies. The perfect combination. A green smoothie a day keeps the doctor away.  Kale made me do it Ingredients: A handful kale A handful baby spinach 1 frozen banana 1 tbsp almond butter Plant-based milk 1 tsp chlorella powder Vanilla powder Instructions: Mix the ingredients in your blender until creamy. Pour into a bowl & decorate with granola, berries or nuts.  

Headspace

‘Try not to overthink the process too much. Instead, enjoy the feeling of pausing to balance and catch your breath.’ ___________ Headspace   Stressed out? Meditation has been shown to reduce daily stress and perceived stress. A couple of days ago I’ve found this app called Headspace, a meditation and mindfulness app.  Since I’m new to meditation this app is perfect. I appreciate the simplicity of it – meditation made simple.  I must say I’ve been enjoying it very much, although it’s only been three days – it’s easy and you can choose from 3, 5 or 10 minutes sessions (the Basic theme). There’s definitely a theme for everyone since you can choose from different topics such as health, brave, happiness, work & performance, sport etcetera. The health theme has sessions such as anxiety, stress, sleep, depression, pain management while the work & performance theme has sessions such as productivity, focus, creativity and balance. The sport theme focuses on topics such as motivation, focus, training, competition, communication and analysis. Perfect for any athletes! There are also these …

Peanut Butter Smoothie

I have a flue going on so tucking into this beauty brightens the day. Who can say no to a chocolate smoothie this divine? I know I can’t. I have a newfound love for chocolate & tahini combos. Buddah Bowl

She’s beautiful, but for how long.’   – Linda Since I’ve been feeling slightly under the weather today (don’t know why!?) I felt like having a big bowl of goodness for dinner. A rainbow bowl. Deliciously filling, and deliciously nutrient dense. I’m feeling better already after enjoying this lovely, nourishing buddha bowl. At least I’m trying to convince myself of that. It will most likely be an early night. Anyway, promise you’ll make this beautiful bowl. If only cause the tahini-dressing goes very well with the veggies. Dix points. ‘Stop dancing in a daydream while the sky is full of stars.’   – Linda   Quiet mornings. Calm sea and freshly brewed coffee. Enjoying the late summer heat while preparing brunch. The beauty of holidays; one have time to enjoy a long brunch on a Thursday. All about simplicity though, fresh food that is easy to prepare. Easy to love. I have a weakness for food with a taste of crispiness, creaminess and comfortness. Strawberry Smoothie Bowl

‘I believe the sun will rise every morning, I believe it will set every night. How can there not be magic with a nature so magical?’   – Linda   This delicious smoothie bowl is jam-packed with vitamin C. Topped with all kinds of goodies such as pecan nuts, chewy rawbites, raspberries and sea buckthorn. A perfect pick-me-up. The taste of sea buckthorn is quite tart, like sour orange, which makes it a nice compliment to a sweeter smoothie. Looking at this smoothie and it makes me think of autumn – fresh, crisp morning vibes. Strawberry Smoothie bowl Ingredients: 1 frozen banana A handful of strawberries 2 tsp almond butter 2 tsp maca powder 2 tsp chia seeds 2 tbsp oat flakes Oatley milk  + vanilla powder Instructions: Place the ingredients in a blender and mix until creamy. Always add the liquid first. Less liquid will make for a thicker smoothie, while more liquid will give you a thinner drink. Eat for the planet

‘Early morning sunrise. I opened up my eyes and it got me thinking of you.’   – Linda   Dear sunrise, I heart you. I heart you like I heart the beauty of nature. The sound of the ocean, the whispers in the wind, the calmness of the forrest. The sky so endless it makes me believe in everything. I believe the sun will set every day, I believe it will rise. How can there not be magic with a nature so magical?  The main reasons why I strive to follow a plant-based diet; I’m doing something good for the environment – It might seem as baby steps, but when choosing to eat more greens I choose to believe in a greener planet. I might not be the most environmentally friendly person, however I strive to do my best.
