How to be more present

‘Don’t wait for the perfect moment. Take the moment and make it perfect.’   Most of our time is spent in the past or in the future, rather than the present moment. According to science there’re great benefits of being more present. By being mindful, you enjoy your friends and family more, you enjoy your food more, everything you’re doing, you enjoy more. Life simply becomes more joyful.   How to be more present-minded;   Pay attention to your breathing. This is one of the simplest ways to become more present. Take a few minutes every day focusing on your breathing. Focus on the inhale, focus on the exhale. Breath in deeply, exhale fully. Allow yourself to bring all of your awareness to your breath. Listen to the sounds. There’re most likely many sounds that you don’t pay attention to when you’re caught up in the past or future. At the moment when I’m writing this I don’t hear anything, but then I stop and allow myself to listen. My neighbour coughing, a child laughing, …

Healthy grocery list

In order to make it easier to live a healthier life – making better food choices –  it’s good to stock up the kitchen with healthy foods. When the pantry is full of good stuff there’s no excuse not to make healthy homemade meals. I know how convenient it can be to buy take-away and grabb a less healthy option if your fridge is home to a lonely carrot. And yes, making homemade meals from scratch is cheaper. A win-win situation. You might feel that you don’t have time to cook all day everyday. Yes you do, cause I bet you don’t have time to be sick. If you have children let them join; cooking is a social activity that can bring the whole family together.   Below you’ll find a list that you can download, and bring to the supermarket next time you need some ”plant-based food shopping inspo”. A basic plant-based nutrition guide

I made a basic vitamin & mineral guide in order to make it a little easier to fully thrive on a plant-based diet. There’re certain vitamins & minerals you need to watch when following a plant-based diet. Make sure you’re getting enough of Vitamin D, B12, Iron and Calcium. Two important nutrients that aren’t included in the guide are Zink and Omega-3 fatty acids. Include a variety of zinc-rich foods throughout the day, such as whole grains, tofu, tempeh, miso, legumes, nuts and seeds. In order to get an adequate amount of omega-3 fatty acids make sure your diet includes flaxseed oil, walnuts, olive oil or hemp oil.   Click the link below to download the guide. Random things I like at the moment

‘Be you. The world will thank you.’   ”It’s beginning to look a lot like Christmas.” Christmas lights make me happy. Joyful. I love December; the coziest time of the year. Gingerbread, Christmas carols and movies (Love Actually ❤ ) kindness and festivities. I don’t even care about the darkness outside when I can light up the entire room with candles. Morning routines. My mornings are holy, the best time of the day. They always include a big glass of water, vitamins, candle light, meditation, yoga/stretch, coffee, breakfast and writing/reading -> and I’m ready for the day ahead. Invest your time wisely.   It’s Finland’s birthday today. 100 years of independence ❤ Congratulations my dear home country. I might not be there right now, celebrating with you. Plant-based diet & iron

How to get enough iron on a plant-based diet? Iron is an essential mineral and is needed for many of the body’s functions. It’s needed to make proteins, such as hemoglobin and myoglobin. Hemoglobin in the red blood cells carries oxygen from our lungs to our tissues, and myoglobin helps supply oxygen to our muscles. Since your body can’t produce iron itself, you need to make sure you consume sufficient amounts of iron as part of a daily, balanced diet. There’re a few factors that affect the amount of iron your body can absorb from your diet. The number one factor is your body’s need for iron; More is absorbed when your body is short of iron, and less is absorbed when your stores are full. There are two types of iron in foods; Haem iron = Iron from animal sources Non-haem iron = Iron from plant-based sources The body absorbs haem iron more efficiently than non-haem iron. Therefore, people following a vegan or plant-based diet need almost twice as much dietary iron each day compared to omnivores …

Vegan mac & cheese

This recipe is very easy to make, especially if you already have some sweet potato leftovers in the fridge and soaked cashews. I’ve been craving a really creamy pasta dish for a couple of days, and yesterday I saw a photo of a deliciously looking vegan mac & cheese recipe so I just had to make it. Oh my! A new favourite. I’ve never been a huge fan of pasta, but this was extremely satisfying. I cooked some gluten free pasta and combined it with the sauce, and topped it all with baby spinach and steamed broccoli. However, the lightning is terrible at the moment. Total darkness 24/7, so what to do. It tastes way better than it looks though, I promise. Invite your friends over for a pasta evening. Comfort food at its best.
