Kale Smoothie

‘Don’t let the colour fool you. A green smoothie a day and you’ll become Wonder Woman.’   Linda I got the chance to make this lovely green smoothie today, just before my blender decided it was time to say goodbye. Oh well, we have had good times, many delicious and nutritious smoothies she have made. The taste is very ‘green garden’, but the banana gives a nice sweetness to it. Try adding almond butter in your kale smoothies. The perfect combination. A green smoothie a day keeps the doctor away.  Kale made me do it Ingredients: A handful kale A handful baby spinach 1 frozen banana 1 tbsp almond butter Plant-based milk 1 tsp chlorella powder Vanilla powder Instructions: Mix the ingredients in your blender until creamy. Green smoothie bowl

”Feed your soul. Feed your power. Feed your strengths. Feed your body. Feed your dreams.”   I’m really into green smoothies at the moment. Green smoothies with amazing toppings. Like this beauty – a creamy, fresh greenilicious smoothie with local strawberries, chia seeds, dark (almost black) chocolate and chunky raw bites. Food heaven. The more I have spirulina, the more I want it. The same goes with green leafy vegetables (and chocolate). The perfect balance. Anyhow, green smoothies give me energy, make me feel alive and powerful. Nature’s food at its best. At the moment I do not feel hungry when waking up. However, I still love my breakfasts so I just enjoy them a bit later. Around noon. Try to listen to your body as much as possible. Feed it when it’s hungry. Give it water when it’s thirsty. Rest when it’s tired. Sweat it out when it’s energetic. Most of all, take care of it. Acai bowls

My all time favourite (together with avocado toast). This yummie bowl of goodness is filled with loads of healthy ingredients that nourishes the body and keeps you satisfied for many hours ahead 😉 Perfect for breakfast, for lunch on a warm and sunny day, as a post-workout meal or simply when you crave something sweet. The ones you buy at cafe’s can be filled with plenty of sugar so it’s perfect if you can make your own bowls at home. Happy mixing! ”Keep calm and have an acai bowl.” Acai bowl Ingredients: 1 frozen banana  50 g frozen acai or 2 tbsp acai powder 1 dl blueberries 1 tbsp unsweetened and organic almond butter A hint of vanilla powder A dash of unsweetened almond milk Additional: Organic vegan protein powder such as hemp powder or pea protein powder Instructions: Place all ingredients in your blender and mix on full speed until smooth and creamy. Pour into a bowl and top with all your favourites. Enjoy!

Nana ice cream

Fluffy nana ice cream for breakfast this lovely sunny Monday! Filled with vitamins and protein this bowl of deliciousness left me feeling energized and satisfied. The perfect recovery-meal after my morning workout. Who said you can’t have ice cream for breakfast?! 😉 Ingredients: 2 frozen bananas 100 g frozen strawberries 1 tsp peanut butter  1 scoop pea protein powder ( I also added one scoop of glutamine) 1 tsp acai powder A hint of vanilla powder Optional: A dash of almond milk or coconut yoghurt (for that extra creaminess)  Instructions: Place all ingredients in your blender and mix until fully combined. It might take a while until you get a nice and fluffy texture. Since my mixer is rather old I added some liquid in form of almond milk. Pour into a big bowl and top with home made granola and fresh berries.

Nice cream

I was craving something nice and creamy after my run this morning so I made myself a delicious nice cream with bananas, frozen mango, coconut cream etcetera. OMG it tasted heavenly. You have to try it! I found this really nice and thick coconut cream, the best one I ever tried. It’s from a Swedish store and I don’t know the brand, but it tastes amazing. Ingredients: 1 banana (preferably frozen) A handful of frozen mango pieces 1 dl Coconut cream + a hint of water Vanilla powder 2 medjool dates 1 tbs maca powder 3 tsp almond butter Instructions: Place all ingredients in a blender and mix on full speed until smooth and creamy. Use a hint of water if it becomes too thick. Pour into a bowl and decorate with home made granola, coconut flakes, raw cacao etcetera. Have a wonderful weekend! //Linda    

Strawberry & macadamia ice cream

A luxurious and simply delicious ice cream made of fresh strawberries, creamy coconut and tasty macadamia nuts. A lovely milk free ice cream in deed, will definitely be one of my favourites this Summer! Next time I’ll take blueberries instead of strawberries. Or why not blackberries or cloudberries? My favourite ice cream of all times is definitely liquorice ice cream, feel I need to make my own milk free version sooner or later. But, back to this beauty – tastes divine so you better try it! Ingredients: 70 g unsalted macadamia nuts (approx. 1.5 dl) 2 dl coconut cream 2.5 dl fresh or frozen strawberries 1.5 tbs agave syrup A hint of vanilla powder 2 tsp freshly squeezed lemon juice Optional: Raw cacao nibs and chopped unsalted macadamia nuts Instructions: 1. Place the nuts and coconut cream in blender and mix until smooth and creamy. 2. Add the strawberries, agave, vanilla and lemon juice and mix on full speed. 3. Pour the ice cream mixture into a airtight food box made of plastic or glass. …

Smoothie parfait

OMG. Seriously!? This was the best smoothie I have ever had. Creamy, sweet and with so much flavour. Absolutely amazing. The Mango Maca Smoothie with its sweet caramel taste. The Raspberry Wheatgrass Smoothie with its taste of sour, and last but not least the Vanilla Chia Pudding. It’s really something extra. Better than candy. Better than coffee. Better than.. Everything else. I promise. Happy mixing! Three layers smoothie parfait Layer 1 – Mango Maca Smoothie: Ingredients: 1 small banana 1 dl frozen mango pieces 1 tbs maca powder 1- 1.5 dl almond milk 2 tsp peanutbutter 1/2 tsp cinnamon Instructions: 1. Place all ingredients in a blender and mix on full speed. Use less almond milk for a thicker smoothie. Layer 2 – Raspberry Wheatgrass Smoothie: Ingredients: 1 small banana 1 dl frozen raspberries A hint of vanilla powder 1-2 tsp wheatgrass 1-1.5 dl almond milk Instructions: 1.
